Ingredients for Pastry Cream (Creme Patissiere)

  • Milk: 1.5 cups (divided)
  • Egg Yolks: 4 large
  • Sugar: 1/2 cup

Instructions

  1. Simmer the Milk and Vanilla
    In a medium saucepan, combine 1.5 cups of milk and vanilla. Cook over medium-high heat, stirring occasionally, until it begins to simmer. Remove from heat.
  2. Whisk Remaining Ingredients
    In a separate bowl, whisk together the remaining 0.5 cup of milk, egg yolks, sugar, and cornstarch until fully combined and smooth.
  3. Temper the Egg Mixture
    While vigorously whisking the egg mixture, slowly pour in the hot milk in a thin stream. Keep whisking until everything is well incorporated.
  4. Cook and Thicken
    Return the combined mixture to the saucepan. Cook over medium-high heat, whisking constantly, until it thickens and comes to a boil.
  5. Strain and Cover
    Pass the mixture through a fine-mesh sieve into a bowl to remove any cooked egg bits. Press plastic wrap directly onto the surface to prevent a skin from forming.
  6. Chill the Cream
    Let the mixture cool to room temperature, then refrigerate for at least 2 hours to set. Before using, rewhip gently for a smooth texture.

  • Refrigerate: Store in an airtight container in the fridge for up to one week.
  • Freezing Not Recommended: Pastry Cream does not freeze well; it may separate upon thawing.
