Ingredients

  • 1/2 cup olive oil
  • 1 yellow onion, diced
  • 4 garlic cloves, minced

  • 1 pound black beans, soaked for 8–24 hours (optional: sprouted)
  • Up to 8 cups filtered water
  • 2 cups stock
  • 1 cup red wine (or additional stock)
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 2 teaspoons sea salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons coconut sugar (optional)
  • 1/4 pound leftover beef or venison, shredded or chopped (optional)

Instructions

  1. Soak the Beans:
    • Start by soaking the black beans in water for at least 8 hours or overnight. Rinse well before cooking.
  2. Instant Pot Method:
    • Sauté: Press the sauté button on your Instant Pot and heat the liner. Add olive oil and diced onion, cooking until soft.
    • Add Garlic and Peppers: Stir in garlic and green pepper, sauté for 1 minute.
    • Combine Ingredients: Add soaked beans, stock, wine, oregano, cumin, salt, black pepper, and enough water to cover the beans.
    • Cook: Seal the lid and set the vent. Use the “chili” setting or manual setting for 50 minutes.
    • Release Pressure: Once finished, quickly release pressure.
    • Final Touches: Stir in apple cider vinegar, optional coconut sugar, and leftover meat if using. Serve over rice or as a soup.
  3. Stovetop Method:
    • Heat Oil: In a large pot over medium heat, add olive oil and diced onion. Cook until soft.
    • Add Garlic and Peppers: Incorporate garlic and green pepper, cooking for about 1 minute.
    • Mix in Remaining Ingredients: Add soaked beans, filtered water, stock, wine, oregano, cumin, salt, and black pepper.
    • Bring to a Boil: Allow to boil before reducing to a simmer.
    • Simmer: Cover and simmer for 3-4 hours or until beans are tender, adding more water as needed.
    • Finish the Dish: Mix in apple cider vinegar, coconut sugar, and optional meat. Serve over rice or as a standalone soup.
