Ingredients

    • 1 can (15 oz) corn, drained
    • 1 jar (24 oz) Dei Fratelli tomato sauce
    • ½ cup reserved pasta water
  • For the Spaghetti:
    • 8 oz spaghetti, cooked and drained
  • For Topping:
    • 1 cup shredded Colby Jack cheese
    • 1 cup shredded cheddar cheese
    • Green onions, sliced, for garnish
    • Optional: fresh cilantro or jalapeños

Instructions

1. Prepare the Taco Meat

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the ground beef, diced onion, and minced garlic. Cook until the meat is browned, and the onions are soft.

2. Build the Sauce

  1. Stir in the taco seasoning, Rotel (with juices), drained corn, and tomato sauce.
  2. Pour in about ½ cup of the reserved pasta water. Mix well and bring to a gentle boil. Reduce the heat and let it simmer for a few minutes.

3. Assemble the Dish

  1. Preheat your oven to 350°F (175°C).
  2. Add a ladle of sauce to the bottom of a greased 9×13 baking dish.
