Instructions
Baking the Cake
- Preheat the oven to 180ºC (160ºC fan) and line a 9×13″ traybake tin with parchment paper.
- In a large mixing bowl, beat the butter and sugar together until they are light and fluffy.
- Add in the eggs, self-raising flour, and vanilla extract, mixing well until combined.
- Pour the batter into the prepared tin and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- After baking, allow the cake to cool completely in the tin.
Preparing the Whipped Cream
- In a separate bowl, combine the double cream, icing sugar, and vanilla extract.
- Whisk the mixture until it becomes thick and creamy.
- Spread half of the whipped cream evenly over the cooled sponge.
Decorating the Cake
- Arrange the strawberries and raspberries on top of the cream to represent the red part of the Union Jack.
- Pipe or spread the remaining whipped cream in the gaps and sprinkle the blueberries on top to complete the design.
