Irresistible Thermomix Chocolate Chip Cookies

Ready to bake some of the best cookies you’ll ever taste? These Thermomix Chocolate Chip Cookies are soft, gooey, and bursting with chocolatey goodness. With just a few ingredients and your trusty Thermomix, you can create a batch that will delight everyone!

Ingredients

  • 160g unsalted butter (softened)
  • 120g brown sugar
  • 40g white sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 225g plain flour
  • ½ teaspoon bicarbonate of soda
  • ¼ teaspoon sea salt
  • 100g dark chocolate chips (plus extra for topping)

Instructions

  1. Prep the Baking Tray
    Line a large baking tray with parchment paper and set aside.

  2. Soften the Butter
    If your butter isn’t at room temperature, place it in the Thermomix bowl. Mix for 20 seconds on speed 5. Scrape down the sides of the bowl.

  3. Mix the Sugars
    Insert the Butterfly whisk. Add the brown and white sugars. Beat for 1 minute on speed 3 (without the measuring cup). Scrape down the sides and repeat twice for a fluffy mixture.

  4. Add Egg and Vanilla
    Incorporate the egg and vanilla extract. Beat for 10 seconds on speed 3, then scrape and repeat for another 10 seconds until well combined.

  5. Combine the Dry Ingredients
    Remove the Butterfly whisk. Add the flour, bicarbonate of soda, and sea salt. Knead for 50 seconds using the knead function. Scrape down and knead a few more seconds if necessary to combine.

  6. Stir in Chocolate Chips
    Fold in the chocolate chips with a spatula. Reserve a few for topping. Refrigerate the cookie dough for 1 hour. Preheat your oven to 160°C fan / 180°C.

  7. Shape the Cookies
    Once chilled, scoop out walnut-sized balls, place them on the baking tray, and flatten slightly. Space them well apart. Press a few reserved chocolate chips into each ball.

  8. Bake
    Bake for 10-12 minutes or until the edges are starting to harden. They might puff up but will deflate as they cool. Leave them on the tray for 10 minutes to set before transferring to a wire rack.

Storage

These cookies are best enjoyed fresh, but they can be stored in an airtight container for up to 3 days.

  • Don’t Rush Cooling: Allow the cookies to cool on the baking tray to firm up properly before moving them.
