Ingredients

For the Cake

  • 400 g unsalted butter (or baking spread)
  • 400 g caster sugar
  • 7 medium eggs
  • 400 g self-raising flour
  • Zest of 2-3 lemons

For the Drizzle

  • 175 g caster sugar
  • 175 ml lemon juice

For Decoration

  • 100 g icing sugar
  • 2-3 tsp lemon juice
  • Lemon zest (for extra garnish)

Instructions

Step 1: Prepare the Cake

  1. Preheat the oven to 180ºC (or 160ºC for fan ovens) and line a 9×13” traybake tin with parchment paper.
  2. Cream together the butter and sugar until you achieve a light and fluffy texture.
  3. Incorporate the eggs, self-raising flour, and lemon zest; beat until all ingredients are well combined.
  4. Pour the mixture into your prepared tin and bake for 45-50 minutes, or until the cake is cooked through.

Step 2: Make the Drizzle

  1. While the cake is baking, mix the lemon juice and caster sugar in a bowl.
  2. Once the cake is done baking, remove it from the oven and evenly drizzle the lemon mixture over the hot cake.
  3. Let the cake cool completely in the tin.

Step 3: Decorate

  1. In a bowl, whisk together the icing sugar and lemon juice until a thick paste forms.
  2. Drizzle this icing over the cooled cake.
  3. Sprinkle with extra lemon zest, allow to set, and then slice to serve!

Tips and Tricks

  • This traybake can last for 4+ days at room temperature.
  • You can freeze this bake for over 3 months.
  • For a 9″ square tin, use 5 eggs and adjust the baking time to 35 minutes.
  • Substitute lemon zest with 2 teaspoons of lemon extract if needed.
  • Bottled lemon juice can also be used in place of fresh juice.
