  • 2 tablespoons of peanut butter (optional)
  • 3-4 bird’s eye chilies
  • 4 cloves of garlic
  • 2 tablespoons of palm sugar (or brown sugar)
  • ½ teaspoon of salt
  • 1 cup of water
  • 1-2 tablespoons of lime juice
  • Sweet soy sauce for drizzling

  • Fried onion crackers (or rice crackers)

Instructions

Step 1: Prepare the Peanut Sauce

  1. In a blender or food processor, combine the peanuts, peanut butter (if using), chilies, garlic, palm sugar, salt, and water.
  2. Blend until smooth, adjusting water as necessary to achieve a creamy consistency akin to double cream.
  3. Stir in lime juice and set the sauce aside.

Step 2: Prepare the Vegetables and Tofu

  1. Soak the rice vermicelli in boiling water for 3 minutes, then drain and set aside.
  2. Blanch the bean sprouts in boiling water for 2-3 minutes, drain, and set aside.
  3. Cut the tofu into small cubes and shallow-fry until golden, about 6-10 minutes. Set aside.

Step 3: Assemble the Ketoprak

  1. Cut the lontong into small pieces.
  2. On a serving plate, layer the lontong, followed by the rice vermicelli, bean sprouts, and fried tofu.
  3. Generously pour the peanut sauce over the top and drizzle with sweet soy sauce.
  4. If desired, garnish with crackers for added crunch.
