Instructions
Step 1: Prepare the Peanut Sauce
- In a blender or food processor, combine the peanuts, peanut butter (if using), chilies, garlic, palm sugar, salt, and water.
- Blend until smooth, adjusting water as necessary to achieve a creamy consistency akin to double cream.
- Stir in lime juice and set the sauce aside.
Step 2: Prepare the Vegetables and Tofu
- Soak the rice vermicelli in boiling water for 3 minutes, then drain and set aside.
- Blanch the bean sprouts in boiling water for 2-3 minutes, drain, and set aside.
- Cut the tofu into small cubes and shallow-fry until golden, about 6-10 minutes. Set aside.
Step 3: Assemble the Ketoprak
- Cut the lontong into small pieces.
- On a serving plate, layer the lontong, followed by the rice vermicelli, bean sprouts, and fried tofu.
