Ingredients

For the Filling:

  • Meat:
    • 1 lb ground lamb (or a mix of ground beef and pork)
  • Vegetables:
    • 1 onion, diced
    • 2 carrots, diced

    • 2 cloves garlic, minced
  • Liquids:
    • 1/2 cup red wine
    • 1 cup chicken stock

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup chicken stock
  • 2 tbsp butter
  • 2 egg yolks
  • 1/2 cup cheese (cheddar or your choice)

Instructions

Step 1: Prepare the Meat Filling

  1. Brown the Meat: In a skillet over medium-high heat, brown the ground lamb for about 10 minutes. Drain excess grease.
  2. Sauté Vegetables: Add the diced onion and carrots. Sauté until onions become translucent (about 5 minutes).
  3. Combine Ingredients: Stir in peas, garlic, and any fresh herbs. Sauté for another 2 minutes, then add tomato paste and cook for 1 more minute.
  4. Deglaze: Pour in red wine, scraping up any browned bits from the skillet. Cook for 5 minutes to reduce the wine, then add Worcestershire sauce and chicken stock. Reduce the mixture until thickened (about 5–10 minutes). Remove from heat.

Step 2: Create the Mashed Potatoes

  1. Boil Potatoes: In a pot of boiling water, cook the diced potatoes for 10–15 minutes until fork-tender. Drain and place in a bowl.
  2. Mix Ingredients: Add chicken stock, butter, egg yolks, half the cheese, salt, and pepper. Mash until creamy and smooth.

Step 3: Assemble and Bake

  1. Layer the Casserole: In a casserole dish, spread half of the mashed potatoes. Layer the meat filling evenly on top, followed by the remaining mashed potatoes.
  2. Finish: Texturize the top layer with a fork and sprinkle with remaining cheese.
  3. Bake: Preheat the oven to 350°F (175°C) and bake for 40 minutes until the top is golden brown and bubbling.
