Ingredients

  • For the Pasta:
    • ¼ cup olive oil
    • 1 tablespoon sun-dried tomato paste

    • 1 teaspoon fresh thyme

    • ½ teaspoon red pepper flakes (adjust to taste)
    • Salt and black pepper, to taste
    • 2 cups grape tomatoes
    • 1 shallot, sliced
    • 3 tablespoons butter
    • 12 ounces fusilli pasta
    • Fresh parsley or basil, chopped for garnish
    • Zest or juice of ½ lemon (optional)

Instructions

  1. Preheat the Oven
    Preheat your oven to 450°F (230°C).
  2. Prepare the Seasoning Mix
    In a medium bowl, combine:

    • ¼ cup olive oil
    • 1 tablespoon sun-dried tomato paste
    • Minced garlic
    • Thyme
    • Oregano
    • Red pepper flakes
    • Salt and pepper
  3. Coat the Veggies
    Place grape tomatoes and sliced shallots in a large baking dish. Pour the olive oil mixture over them, and toss to ensure they are well coated.

    Once the tomatoes are ready, remove them from the oven. Stir gently, smashing some tomatoes to release their juices.
  8. Mix in the Pasta
    Add the hot cooked pasta and ¼ cup reserved pasta water to the baking dish. Toss until everything is well combined and the pasta is coated in the sauce, adding more pasta water if needed.
  9. Add the Burrata
    Nestle the burrata on top of the hot pasta.
  10. Warm the Burrata
    Loosely cover the dish with foil for 2–3 minutes to gently warm the burrata.
  11. Finishing Touches
    Remove the foil, sprinkle with chopped fresh parsley or basil, and break open the burrata to allow its creamy center to meld into the pasta.

    For an extra layer of flavor, finish with a sprinkle of lemon zest or a squeeze of lemon juice.
