  • 2 (8 oz) containers cream cheese (room temperature)
  • 1 stick unsalted butter (room temperature)
  • 1 tablespoon vanilla extract

For Topping:

  • White chocolate bar shavings

Instructions

Step 1: Prepare the Cheesecake Layer

  1. Preheat your oven to 325°F (163°C).
  2. Line the bottom of a springform pan with foil or parchment paper, then spray with non-stick spray. Wrap the outside of the pan tightly with foil to prevent water from entering.
  3. In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition.
  4. Blend in the sour cream, heavy cream, and vanilla extract until combined. Avoid overmixing.
  5. Pour the cheesecake batter into the springform pan. Place this pan in a larger pan and add hot water until it reaches about an inch up the sides.
  6. Bake for 45 minutes or until set. Allow the cheesecake to cool, then freeze in the springform pan for several hours or overnight.

Step 2: Bake the Red Velvet Cake Layers

  1. Preheat your oven to 350°F (177°C).
  2. Grease and flour two 8-inch cake pans.
  3. In a medium bowl, lightly whisk the eggs. Add the remaining liquid ingredients and mix until well blended.
  4. In a large mixing bowl, combine all dry ingredients and mix well with a whisk.
  5. Add the wet ingredients to the dry mixture and mix on medium-high speed for about a minute until fully combined.
  6. Divide the batter between the two prepared cake pans. Tap the pans on the counter to release any air bubbles.
  7. Bake for approximately 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely. Cover with plastic wrap while cooling.

Step 3: Make the Cream Cheese Frosting

  1. Using a mixer, beat all frosting ingredients together until smooth and creamy.

Step 4: Assemble the Cake

  1. Remove one cooled cake layer from the pan and place it on a cake plate.
  2. Carefully remove the cheesecake from the springform pan and set it on top of the first cake layer. You may need to trim the cheesecake to fit perfectly.
  3. Place the second cake layer on top of the cheesecake.
  4. Apply a thin crumb coat of frosting around the entire cake. Refrigerate for 30 minutes to set the crumb coat.
  5. Once set, frost the cake with the remaining icing. Optionally, pipe some icing decorations around the edges.
  6. Finish by garnishing the top with shavings of white chocolate.

Now you’ve created a stunning Red Velvet Cheesecake Cake that will be the highlight of any dessert table! Enjoy every layer of this delicious treat and wow your guests with its rich flavors and beautiful presentation.
