  • 4 small russet potatoes (approximately 2 cups when mashed)
  • 1 cup cassava flour

Instructions

Prepare the Potatoes

  2. Instant Pot Method:

    • Insert a trivet into the Instant Pot and add 1 cup of water to the bottom.
    • Arrange the peeled potatoes on the trivet and set to manual cooking for 10 minutes.
    • Once the cooking cycle is complete, perform a quick release of the pressure. Remove the potatoes and let them cool slightly, then peel.
Make the Gnocchi Dough
  1. Place the cooked and peeled potatoes in a mixing bowl. Mash until smooth and free of lumps.
  2. Allow the mashed potatoes to cool until they are safe to touch.
  3. Incorporate the eggs and cassava flour into the potato mixture. Stir until a smooth dough forms.
  4. Use a bench cutter or knife to divide the dough into 8 equal pieces.
  5. Roll each piece into a rope that is approximately ½ inch thick.
  6. Cut the ropes into 1-inch segments, setting each piece aside as you go. Repeat until all dough is portioned.
Cook the Gnocchi
  1. Bring a large pot of water to a rolling boil. Carefully add the gnocchi to the pot.

  2. Cook the gnocchi until they float to the surface, which should take about 10-12 minutes.

    • Alternative Cooking Method: For a quicker option, you can cook the gnocchi in the Instant Pot. Place the gnocchi in a covered dish with water and set to manual for 8 minutes.
