- 1 onion, diced
- 4 teaspoons minced garlic
- 1 teaspoon chili powder
- 2 (14.5-ounce) cans fire-roasted diced tomatoes
- 1 (14.5-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can red kidney beans, rinsed and drained
- 1 (14.5-ounce) can low-sodium chicken broth
- 10 ounces frozen corn
- 1 cup water
- Coarse salt, to taste
- Freshly ground black pepper, to taste

Instructions
- Prepare the Chicken: In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Rub this mixture evenly over the chicken breasts.
- Cook the Chicken: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chicken and cook on both sides until golden brown and fully cooked, about 6–8 minutes per side. Remove the chicken from the skillet and shred it.
