But a good breakfast will provide you with the energy you need in the middle of the day, especially when you are busy doing all kinds of outdoor activities. When you’re in the woods, you want to spend less time cooking and more time enjoying your food – so go for easy meal prep for lunch.
These quick camping lunch recipes are perfect for the outdoors!
Quick spicy chicken and vegetables
What do you need:
- 2 large chicken breasts
- 3 large carrots, cut into thirds
- 4 red-skinned potatoes, halved
- 2 ears of corn, cut into wedges
- 5 sprigs of fresh thyme
- 1 tablespoon of butter
- 1 tablespoon of olive oil and more for frying
- 1 tablespoon of paprika
- 2 teaspoons of salt
- 2 teaspoons of onion powder
- 1 teaspoon of rosemary
- 1 teaspoon of garlic powder
- 1 teaspoon of black pepper
- 1 teaspoon of dried oregano
At home, prepare the vegetables and place them on Ziploc bags. In a small bowl, combine paprika, salt, onion powder, rosemary, garlic powder, black pepper and oregano and place on a Ziploc bag until ready to use. At the campsite, reserve 1 tablespoon of the spice blend. Place the rest on a large resealable bag with the chicken. Leave to marinate for 1 hour.
Place the vegetables in a bowl, drizzle with olive oil and sprinkle with the reserved spice blend. Mix until the vegetables are well coated. Heat the oil in a pan and cook the marinated chicken over medium-high heat until golden brown. Transfer to heavy-duty aluminum foil, then add the vegetables. Garnish with butter and thyme and seal the foil to form a bag. Cook over a hot campfire until the chicken is cooked through.
Foil Packet of Turkey Meatloaf
What do you need:
- 1/2 kg. ground turkey
- 1 large egg
- 1/3 cup quick-cooking oatmeal
- 1/4 cup chopped onion
- 6 tablespoons barbecue sauce, divided, plus more for serving
- 1 teaspoon of dried marjoram
- 3/4 teaspoon kosher salt
It is advisable to prepare the meatloaf at home, all you have to do is heat it over the campfire! Combine ground turkey, egg, oatmeal, 3 tablespoons barbecue sauce, marjoram and salt in a bowl. Mix well and divide into 4 portions (4 x 2.5 inches).
At the campsite, place the meatloaf portions on separate sheets. Brush with barbecue sauce and cook over campfire for 20 to 25 minutes or until cooked through. Serve with more barbecue sauce. Best served with vegetables.
