Peaches and spicy rib eye steak

What do you need:

  • 6 rib eye steaks, 1 inch thick
  • 12 peaches, peeled, pitted and halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons chopped thyme
  • 1 tablespoon of melted butter
  • 1 tablespoon of salt
  • 1 tbsp plus 1/2 teaspoon ground black pepper
  • 1 tablespoon of paprika
  • 2 teaspoons of garlic powder
  • 2 teaspoons of onion powder
  • 2 teaspoons of lemon and pepper seasoning
  • 1 teaspoon of sugar
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon crushed red pepper
  • Fresh thyme sprigs

Combine salt, 1 tablespoon ground black pepper, paprika, garlic and onion powders, lemon pepper seasoning, cumin and red pepper. Rub both sides of each steak with the mixture. Cook the steaks on a preheated grill, covered, until desired doneness. When you are ready, remove from the heat and let stand 8 to 10 minutes. Grill the peaches over indirect heat for 5 minutes. In a medium bowl, combine the remaining black pepper, balsamic vinegar, chopped thyme, butter and sugar. Stir the grilled peaches into the mixture then serve with a steak garnished with sprigs of fresh thyme.

Flank Steak Salad with Coriander Grill Dressing

What do you need:

  • 1/4 kilogram beef flank steak, trimmed fat and diamond-marked
  • 1 corn, husks and silks removed
  • 4 cherry tomatoes, halved
  • 2 yellow bell peppers, seeded and halved
  • 2 onions, trimmed
  • 2 cups mixed greens

Coriander dressing

  • 1 garlic clove, peeled and cut into quarters
  • 3 tablespoons of lime juice
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons of chopped shallot
  • 1 tablespoon of water
  • 1 tablespoon of olive oil
  • 2 teaspoons of honey
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon of salt

Combine the garlic, lime juice, cilantro, shallot, water, olive oil, honey, chili powder, cumin, and salt in a blender or food processor. Stir until the mixture is well mixed and smooth. Place half of the dressing in a resealable container and refrigerate in the refrigerator until ready to use. Pour the remaining half into a resealable plastic bag and place the steaks in the bag. Refrigerate for 30 minutes. When you are ready, remove the meat from the bag and discard the excess marinade. Brush corn, sweet peppers and onions with olive oil. Grill meat and corn over medium heat for 20 minutes or until cooked through. Grill the sweet peppers for the last 8 minutes and the onion for the last 4 minutes. Finely cut the steaks. In a serving dish, combine the grilled meat, grilled vegetables, green vegetables and tomatoes. Garnish with cilantro dressing.
