What do you need:

  • 3/4 cup panko breadcrumbs
  • 1/3 cup hummus
  • 1/4 cup grated Parmesan

Combine the breadcrumbs and Parmesan cheese on a plate then place the hummus on a separate plate. Line a greased baking sheet with heavy aluminum foil. Place the mixture on a greased baking sheet and bake at 400 degrees for half an hour. When you are ready, check (using a fork) if the desired doneness of the carrots has been reached. Let cool for a few minutes before serving. Season with a little cayenne pepper if desired.

Easy Zucchini Pepperoni Pizza

What do you need:

  • 3 zucchini (preferably the same size), ends cut off, sliced ​​into 3/8 inch wide
  • 20 pepperoni slices, halved
  • 1 1/2 cups grated mozzarella cheese
  • 1 teaspoon of mixed Italian herbs
  • 1 teaspoon of Spike seasoning
